This is an easy recipe I came across years ago. I found it in a Cranks recipe book. It comes out every year and it's still a favourite. 😍

Carob fruit & nut squares

  • Carob bar, chopped 12 oz (350g)
  • Sultanas 4 oz (100g)
  • Shredder coconut, toasted 2oz (50g)
  • Brazil nuts, chopped 2oz (50 g)
  • Brands or sherry 1 tbs (15 ml)
  • Double cream 3 tbs (45 ml)

Preparation time: 15 - 20 minutes + chilling time.

Put the chopped carob into a bowl over simmering water. Stir until melted, being careful not to overheat the carob. Remove from the heat and stir in the sultanas, coconut and the chopped Brazil nuts. Then stir in the brandy and cream. Spread the mixture evenly over the base of an 8" (20 cm) square tin lined with foil. Refrigerate until firm. Cut into small squares.

Makes about 50.
